Ingredients:

2 tablespoons olive oil
1medium onion, finely chopped
1medium sweet red pepper, finely chopped
2tbsp beans finely chopped
2 teaspoons chili powder
1/4 teaspoon salt
1/teaspoon pepper
1tsp onion powder
1tsp garlic powder
2 cups vegetable stock
1cup frozen corn
1cup quinoa, rinsed
1/2cup peas
1cup fresh salsa

Method:

1 In a large skillet, heat oil over medium-high heat. Add onion, red pepper, and seasonings; cook and stir 5-7 minutes or until vegetables are tender.

2 Stir in stock and corn and peas.bring to a boil. Stir in quinoa. Reduce heat; simmer, covered, 12-15 minutes or until liquid is absorbed.

3 heat through, stirring occasionally.mix salsa in the end . Stir well and serve.
