Makhana salad & spinach soup

Ingredients:

Cucumber-1/2cup(diced)
Apple-1/2cup(diced)
Paneer-1/2cup(cut into cubes)
Makhana-1cup
Coriander leaves
Green chilli-1(crushed)
Lime juice-1tsp
Salt&pepper
Cumin powder-1/2tsp

Method:

Sprinkle apple with 1/2tsp lime juice .lightly roast makhanas. Mix in a bowl limejuice, salt and sugar.Add ginger, green chilli,coriander leaves,salt n pepper and mix throughly.Add apple and paneer pieces and cucumber. Chill in the refrigerator till required. Toss very well.add makhanas. Garnish with grated paneer and coriander.
Spinach soup:
Ingredients:
Spinach-1cup(finely chopped)
Ginger-1/2″
Tomatoes-2(cut into cubes)
Bay leaf-1
Salt&pepper
Cumin powder-1/4tsp
Butter-1/2tsp
Water as required
Method:
Rinse the Palak leaves very well in water. Now mix spinach leaves , ginger , tomatoes and bay leaf with 2cups of water in a cooker . After2-3whistles blend it nicely and strain in a pan. Add salt , pepper, cumin powder in it. Drizzle some butter and serve hot.
