Pasta salad

Ingredients

Macaroni of your choice
Hard-boiled eggs-3-4
Yellow bell pepper-1/2 cut into small pieces
Red bell pepper-1/2 cut into small pieces
Lime juice-1 tsp
Red onion-1chopped
Mayonnaise-1 cup
Pineapple cubes-1/2 cup
Dijon mustard-2 tbsp
sugar-2tsp
salt and pepper

Method

Cook the pasta in salted water, Drain in a colander and rinse under cold water.
Shake the colander to toss the pasta, and drain for about 5 minutes, tossing occasionally.
Transfer the drained pasta to a large bowl and add the eggs, celery, red bell pepper, red onion and pineapple cubes.
Mix the mayonnaise, lime juice, sugar, and Dijon mustard in a small bowl and season with salt and freshly ground black pepper.
Add to the macaroni mix and toss until evenly coated.
Season with more salt and pepper to taste and refrigerate for 1 hour before serving.
