Mango Cake

Ingredients

Maida-1and1/2 Cup
Powdered Sugar - 1/4Cup
Baking Soda-1/4Tsp
Baking Powder - 1/2Tsp
Vanilla Extract-1Tsp
Curd-1Cup
Olive oil - 3Tbsp
Milk-1/2 Cup
Whipping Cream - 1/2 litre
Mango pulp-1 Cup
Mango pieces - 1Cup

Method

Preheat the oven at 180°C for 10 minutes.Sieve together maidan, Powdered Sugar, baking powder and baking soda.To the sieved dry ingredients add, oil, vanilla extract and curd and mix with a spetula.Mix by cut and fold method.Now add milk little by little and mix.Mix till the batter becomes of pouring consistency
Take a greased cake tin. Line it with a butter paper.Transfer the batter into cake tin.Bake the cake in preheated oven for 15-20 minutes.Demould it and let it cool down.In the mean time we can prepare Icing.Take chilled non dairy Whipping cream in a chilled bowl.Whip cream till soft peaks and divide the whipped cream into two equal portions.To one part add mango puree.Take cake on a flat surface.Cut it into two halves. Take one half and spread mango cream on it.Spread mango pieces on it.
Cover it with another layer of cake. Repeat the same procedure with all the layers. Decorate the final layer with mango pieces and white Icing.
