Sewai Kheer

Ingredients

1 cup Broken Seviyan/Vermicelli
500ml/2 ½ cup Whole Milk
1 tbsp Ghee
¼ cup Sugar
1 tbsp Raisin
¼ tsp Cardamom Powder
1-2 Pinch of Saffron threads
2-3 tbsp chopped Dry Fruits (Almonds, Cashew and Pistachios

Method

Soak saffron in 1-2 tbsp milk and keep aside.
Heat ghee in a deep pan. Add broken seviyan and roast it for 2-3 minutes on low flame.
Add chopped dry fruits, raisin and roast it again on low flame for 2 minutes.Add milk, stir it continuously till milk bring it to boil, then add sugar, again boil it till seviyan cooks properly and milk mixture becomes thicker.
Add cardamom powder, soaked saffron and mix it well, cook it for 1-2 minutes
