Dal Pakwan

Ingredients

For Dough
1 1/2 cup all purpose flour
1 1/2 tablespoon ghee
1/4 teaspoon powdered red chilli
1/4 teaspoon cumin seeds
1 pinch salt

For The Main Dish
125 gm soaked chana dal
3 stem removed curry leaves
3 chopped green chilli
1/4 cup sunflower oil
1 1/2 cup water
1/2 teaspoon cumin seeds
1/2 chopped tomato
1/4 teaspoon powdered turmeric
1 pinches salt

Method

Take a glass bowl and add all the ingredients required for the dough. Mix these ingredients properly and then add enough water to knead a semi-soft dough. Once the dough is ready, take small portions of it and roll balls out of them. Roll them into 6 to 8cm flat discs and lightly prick them with a fork and keep aside.Next, heat oil in a deep frying pan over moderate flame. Fry the prepared pakwans until golden and crisp in texture. Remove and drain excess oil. Keep aside. Drain the chana dal and keep aside. Add enough water and pressure cook until it turns soft. Add turmeric powder, salt and mix well.If needed, add some more water and place it over low flame. Simmer the dal till it gets a slightly thick consistency. It will take around 5-7 minutes. Once done, remove and keep aside. Then, heat ghee in a pan and saute the cumin seeds, green chillies and tomatoes for a minute. Add curry leaves and stir-fry for another minute and pour this into the dal and stir gently.Once done, garnish with onions, coriander leaves, pinch of mango powder and garam masala powder. Dal Pakwan recipe is ready to be served and savoured. Pair it with corriander chutney and tamarind sauce.
