Tuna chickpea salad

Ingredients

for salad:
• 1 can tuna
• 1 cup chickpeas rinsed and drained
• 1/2 cucumber seeded and diced
• 1 red bell pepper diced
• 1/4 red onion minced
• ¼ cup minced fresh parsley/Thyme

Dressing:
• 1/2 cup extra virgin olive oil
• 1/4 cup lemon juice
• 2 cloves garlic grated or finely minced
• 1 teaspoon dried oregano
• 1 teaspoon Dijon mustard
• 1 teaspoon salt
• 1/2 teaspoon black pepper

Method

1. Flake the tuna into a salad bowl and add chickpeas, cucumber, red pepper, onion, olives and parsley. Toss gently.
2. Whisk together the dressing ingredients and add them to the salad bowl.
3. Toss everything together to coat and serve.
