Mathri and Namakpare

Ingredients

For Mathri:
Maida-2 cups
Salt-1/2 tsp
Kasoori Methi-3 tsp
Ghee-3-4tbsp
Oil for frying

For Namakpara:
Maida-2cups
Salrt-1/2 tsp
Ajwain-2tsp
Ghee-3 tbsp
Oil for frying

Method

Mathri:
1.Mix the flour,Salt,methi in a bowl.
2.Add ghee and run between your palms until it takes the form of bread crumbs.
3.Now using luke warm water,knead it into a soft dough, let it rest for 30 mins.
4.Divide the dough into small balls and press between both palms/roll out the balls
5.Heat oil and fry the mathris on a moderate heat till golden brown.
6.Remove and drain on paper towel,keep it sealed and store it in an airtight container.

Namakpara:
1.Mix the flour,Salt and ajwain in a bowl.
2.Add ghee and run between your palms until it takes the form of bread crumbs.
3.Now using luke warm water,knead it into a soft dough, let it rest for 30 mins.
4.Roll the dough in a thin circle,cut the circle in long rectangles or diamonds.
5.Heat oil and fry on a moderate heat till golden brown.
6.Remove and drain on paper towel,keep it sealed and store it in an airtight container.
