Spongy n cheesy:
Rinse the rice and the urad daal and methi seeds nicely and soak it overnight (app 6-7 hours). Now Grinde this mixture in small portions and make a smooth batter. Add little salt to the batter and mix well. Cover and let it ferment for 8-9 hours. After 8-9 hours you ll find rise in volume . Now , for stuffing, take a pan. Add oil and sauté chopped onions in it. Add shredded spinach and sauté it well . Add corn to it. Add salt and pepper as per your taste. Now heat till this mix cools down and add to the mix. Keep little cheese aside . Now , take idli moulds and add oil to it.Pour one tbsp mixture of batter to it and tilt it a little to coat sides . Add a spoonful of mix to it. Add little cheese over it . Again cover it with 1 tsp of batter. Keep it in microwave for 5 minutes . Cut it from middle and serve with chutney of your choice.
