Parantha noodles & rice cutlets

Ingredients:

Plain paranthas-3
Carrot-2(cut into julienne)
Capsicum-1(cut into julienne)
Onions-2(thinly sliced)
Cabbage-1cup
Soya sauce-2tsp
Chilli sauce-2tsp
Vinegar-1tsp
Salt&pepper
Oil

Method:

cut paranthas into thin strips and fry it slightly. I have used air fryer for that. Now, heat oil in a wok . Sauté onions in it. Add carrots , capsicum and cabbage to it. Sauté well for 2-3 mins.add salt n pepper to it. Add vinegar, soya sauce and chilli sauce and mix well. Add strips of paranthas to it and mix well. Sprinkle some scallions on it and serve hot.

Rice cutlets:

Ingredients:

Steamed rice-1cup
Mashed potatoes-1/2cup
Onions-1(finely chopped)
Green chilli-2tsp
Coriander leaves- handful
Salt&pepper- as per taste
Garam Masala-1tsp
Cumin powder-1tsp
Gram flour (besan)-2tsp

Method:
Take a deep bowl . Mix steamed rice (you can use leftover rice also for this). Mix mashed potatoes in this. Add rest all the ingredients. Onions, green chilli, coriander leaves, salt and pepper, cumin powder, Garam Masala powder and besan. Mix all these ingredients well. While mixing mash rice also nicely. Now make it into either shape of tikis or we can make rolls of it. Shallow fry it on a tawa. Serve hot with Pudina chutney.
