Kulche chole

Ingredients:

For kulchas :
Flour – 1 cup
Curd – 1/4 cup
Sugar – 1/2 tsp
Salt – a pinch
Baking soda – 1/4 tsp
Ghee/oil – 2 tsp
Corriander seeds
Nigella seeds (kaloinji )

White chana:
Chana – 1 cup
-onion-2 (pureed)
Green chillies -2 tbsp
Ginger garlic – 2 tbsp (chopped )
Amardana powder – 1 tsp
Jeera powder – 1 tsp
Salt and pepper
Chana masala – 1 tsp

Method:

Street Food

Mix flour , salt , sugar ,baking soda in a bowl . Knead smooth and soft dough using curd . Now , cover the dough with moist cloth and keep at some warm place for 2-3 hours . After 2-3 hours ,knead again and make small balls of dough .with a rolling pin,Flatten each ball in desired shape . Sprinkle some kalonji and corriander leaves and place on a hot girdle . Cook it like chapati. Apply ghee on both sides and serve hot with chana . Soak chana overnight then boil it with salt and water in a cooker alternatively .Add boiled black tea to it while boiling . It will give nice black colour to chickpeas . Heat oil in a Kadhai . Sauté onion, ginger , garlic and green chillies untill done . Add cumin powder , anardana powder , chana masala , salt and tamarind paste . Add boiled chana . Mix well . Sauté for 3-4 mins . Garnish with corriander leaves and Julienne of ginger . Serve hot with masala onions and kulchas
