Method:
Quick and Easy
Take eggs and beat well in a deep bowl until it is three times in volume.
Beat sugar and oil in it until creamy.
Sift maida and soda-bi-carb and spices 2-3 times to mix well.
Now, take a separate pan and caramalise 4 tsp of sugar on low heat.
Pour 1/2 cup water in it.
Let it cool down and add this syrup to the egg mix.
Mix nuts to the maida.
Add maida, dates , carrots to the mix and using spatula mix well. Dont use beater now.
Pre-heat oven to 180 degrees C.
Brush a little oil to your pan and sprinkle maida to its sides.
Now, pour this mixture and bank for 45 mins at 180 degrees C.
Let it cool down. Now , tap on the back side of your baking pan and take the cake out.
You can cut it into pieces and serve it with ice cream or cream.
