Method:
Heat milk in a non-stick pan, add custard powder, mix well and cook till the mixture thickens. Remove from heat, strain the custard into a bowl and set aside to cool.
Preheat oven to 180ºC.
Sieve together refined flour, baking soda and baking powder into another bowl.
Cream together butter and castor sugar in a third bowl till light and fluffy. Add vanilla essence and custard and beat well.
Add flour mixture and fold till well combined.Divide the mixture into equal portions and shape them into lemon sized cookies. Place them on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes. Remove from oven and let it cool.
